So, we like to build stuff.  Like…restaurants, in Kīhei, Kahului and, soon, Orange County, California!  But we also consider each of our signature menu items a “building” project of its own, as we’ve carefully combined flavors and ingredients to construct our finished salads and sandwiches.  Every salad technician has the training to know not only how much of each item goes into a recipe, but when to add it in and where to put it on the plate.  It’s a process we’ve put a lot of thought into, and it matters.  Quality and consistency are huge priorities for us, so much so that we’ve created a video series called “Fork & Salad Builds” to proudly give you a behind-the-scenes look at our “construction” process for some of the menu favorites.  So here’s a sneak peek at three of them.

Our chef-inspired Buckwheat Noodle Salad (265 calories) is vegan and dairy-free!  It features Spring mix, carrot, wasabi peas, radish, avocado, bell pepper, sprouts and gluten-free miso-ginger dressing.

 

Our Ancient Grain Bowl (796 calories) is a more recent addition to our menu, as we happily respond to customer demand.  It’s gluten-free and features quinoa, purple cabbage, tomato, cucumbers, curry golden raisins, herbs, kalamata olives, hummus, feta, Meyer lemon-herb dressing and tzatziki sauce.

We couldn’t leave out our sandwiches, which remain just as popular as our salads!  Here’s the Lemon & Thyme Chicken Sandwich (675 calories), with macadamia nut pesto, apples, arugula, tomato, mango dressing and feta cheese.
